Preheat oven to 425 F. Remove roast from packaging. Place Organic Grass Fed Beef roast on a rack in a shallow roasting pan. Roast approximately 45-60 minutes. Use an instant read thermometer and remove when internal temperature reaches 125 F for rare, 135 F for medium rare, and 145 F for medium. Tent loosely with foil and let stand 15 minutes before carving.
