- 2 Ea Sweet Potatoes
- 4 Oz Butter
- 2 Tbsp Grape Seed Oil
- Large Onion Diced
- 4 Garlic Clove Chopped
- 1 Tbsp Sugar
- 1Tsp Salt
- 1Tsp Black Pepper
- 2Tbsp White Balsamic
- ½ C Apple Butter
- 2 Ea Raise American NY Strips
- 1 Tbsp Montreal Steak Seasoning
- 1 Tbsp Cajun Seasoning
- Spray Oil
Preheat oven to 350°f, wash sweet potatoes, poke whole with fork place on tray and put in oven. In a sauté pan place the butter and grape seed oil, bring to medium heat and add onions and garlic. Very slowly sauté and caramelize the onion, it should take at least 30 minutes. Remove the NY strips from package, pat dry with paper towel and place on tray. Mix the Montreal and Cajun seasoning, lightly oil the steaks and rub each with a Tbsp. of the spice blend and let stand 30 minutes at room temperature.
Preheat grill to a medium heat and oil grill. Now that onions are caramelized, add the sugar and cook until the onions start to slightly stick, add salt & pepper, white balsamic and apple butter, and reduce slightly thicken. Place seasoned tempered steaks on grill and cook evenly on each side until just below desired temperature, remove, and let set for 5 minutes. Place on plate and cover each with Savory Apple Butter sauce, serve with baked sweet potato, butter, and maple syrup if desired.
